一、麻婆豆腐——下饭菜里的“扛把子”

要说下饭菜,麻婆豆腐绝对排第一!豆腐滑嫩得像婴儿的皮肤,肉末鲜香四溢,再加上红亮亮的豆瓣酱汤汁,麻辣鲜香的味道直击灵魂。
做法:豆腐切成小块焯水去豆腥。锅里烧油,放入牛肉末炒香,加豆瓣酱、豆豉、蒜末炒出红油,倒入适量清水煮开。放入豆腐轻轻推几下,别用铲子乱翻,豆腐容易碎。煮3分钟左右淋入水淀粉勾芡,撒上花椒粉和葱花出锅。舀两勺盖在米饭上,三碗不够算我输!
二、农家小炒肉——锅气十足的“米饭消失术”

这道菜在湖南叫“辣椒炒肉”,在四川叫“回锅肉”的亲戚,不管叫什么,就一个字——香!五花肉煸出油脂后焦香四溢,配上青椒的清香微辣,每一口都带着浓浓的锅气。
做法:五花肉切成薄片,青椒斜切成圈。锅里不放油,直接把五花肉片下锅中小火煸炒,炒到肉片卷曲、微微焦黄、油脂都逼出来。放入蒜片、豆豉炒香,加入青椒大火翻炒几下,淋入生抽、少许老抽上色,翻炒均匀出锅。这菜一上桌,米饭准得再煮一锅!

做法:老豆腐切成厚片,两面煎到金黄盛出。锅里留底油,蒜末爆香,放入切好的番茄块大火炒出汁水,用铲子压一压番茄出汁更快。倒入煎好的豆腐,加生抽、蚝油、少许糖调味,加少量水焖3分钟让豆腐吸饱汤汁。出锅前撒葱花。这菜酸甜开胃,夏天吃特别舒服,老人孩子都爱吃!
四、可乐鹌鹑蛋——小朋友抢着吃的“甜口下饭菜”

家里有小朋友的,这道菜一定要学会!鹌鹑蛋煎到虎皮状,再用可乐一焖,酱香浓郁带点甜,小朋友能就着它吃两碗饭。
做法:鹌鹑蛋煮熟剥壳。锅里烧油,放入鹌鹑蛋小火煎到表面金黄起虎皮。锅留底油,葱花姜末爆香,加生抽、老抽、蚝油、盐、白糖调味,倒入半瓶可乐,盖上锅盖小火焖5分钟。出锅前撒上芝麻和葱花,好看又好吃!这道菜成本不到十块钱,端上桌比肉还抢手。
五、蒜蓉粉丝蒸虾——宴客有面子的“快手硬菜”

最后来一道稍微“高级”一点儿的,但做法其实特别简单。蒜蓉的香、虾的鲜、粉丝的滑,三样凑一块儿,没人能拒绝。
做法:粉丝用温水泡软铺在盘底。虾开背去虾线,摆在粉丝上。蒜末用热油泼一下激发出香味,加生抽、蚝油、蒸鱼豉油搅匀,均匀浇在虾上。水开后上锅蒸8分钟,出锅撒葱花,再淋一勺热油。当盘中的最后一只虾被夹走,剩下的酱汁和粉丝,能毫无悬念地征服两碗白米饭!
