现在来做地三鲜。这道经典的东北家常菜,主料是茄子、土豆和青椒。先将土豆去皮切滚刀块,茄子同样切块,青椒掰成小片。锅中多倒些油,油温六成热时,先下土豆块炸至金黄微焦,捞出控油;再下茄子块,炸至表皮皱缩、色泽金黄,同样捞出。留底油,爆香蒜末和姜末,加入炸好的土豆和茄子,快速翻炒。接着调一碗料汁:两勺生抽、一勺老抽、半勺白糖、一勺淀粉、少许盐和清水搅匀。倒入锅中,大火翻炒至汤汁浓稠,最后下青椒片,翻匀即可出锅。地三鲜色泽油亮,咸香下饭,虽是素菜,却比肉还香。趁热吃,外酥里嫩,每一口都是家常的满足。
