先准备 150 克红薯淀粉,最好是那种颗粒状的,接着加入 370 克凉水,搅拌均匀,让淀粉融化,先放一边备用。
然后在锅里倒 500 克凉水,加 1 克食用碱面,再把化好的淀粉水搅匀倒进去,之后开大火,拿铲子一直顺着一个方向搅动。最后搅到那种比较浓稠的状态,就调小火,接着顺着一个方向搅,全程大概搅 12 到 15 分钟。要是觉得这淀粉糊变得特别浓稠,还半透明,那就说明熬好了,把它倒到一个容器里,把表面弄平,然后盖上保鲜膜或者盘子,让它冷却,最好把它放冰箱冷藏,这样更好定型。
趁这工夫,咱们来调点芝麻酱,按照家里人口数调,芝麻酱里得加点食用盐,再倒半勺炸熟的食用油,搅拌均匀,用食用油调麻酱,吃起来更香。之后再准备点蒜泥水备用。
大概四五个小时吧,这焖子就完全冷却了,变凉变硬,把它倒出来,改刀切成竖条,然后再切成小块。之后在平底锅里倒点食用油,抹匀,把切好的焖子块放进去,底部煎到定型,再翻面煎一下,用铲子边按压边煎,这样能让它定型更快。
