为什么饭店炒的空心菜翠绿脆嫩，自己在家一炒就发黑出水？

炒空心菜这事，说起来真不复杂，但很多人就是做不好。明明在饭店里吃的时候，那空心菜又绿又脆，看着就舒服，可一回到家，照着大概的样子炒，出锅就是另一回事了。颜色发黑，盘底还渗出一滩水，叶子塌得像煮过一样，筷子夹起来都费劲，更别提什么口感了。

这个情况，我估计大部分自己做过饭的人都碰到过。你说是不是锅的问题？是，但也不全是。饭店后厨那灶眼，火苗子蹿起来老高，锅烧到发红，菜倒进去，几秒钟就能熟。家里那灶火，差得太远了，这确实是根本原因。火不够大，菜倒进锅里，温度一下就掉下来了，没法快速炒熟，只能在锅里慢慢变软，时间一长，水分就跑出来了，菜叶子里的那个绿色物质一遇到这种闷热的环境，就会变色，看着就没食欲。

既然家里火小是改不了的事实，那做菜的方法就得跟着变。你不能把饭店那一套直接搬过来用，得琢磨一套适合家里灶台的办法。核心就两条，一个是菜下锅前要尽量干，一个是炒的过程要快。

先说准备工作。很多人洗好空心菜，把水沥一沥就直接下锅了，这肯定不行。菜叶子上挂着那么多水，一下锅，高温热油遇到水，那不就等于半炒半煮吗？不黑才怪。洗完之后，最好多甩几下，把水珠尽量弄掉。要是时间来得及，把菜摊在案板上或者篮子里，放个十来分钟，等叶子表面看着有点蔫了，再下锅，效果会好很多。另外，空心菜那个梗和叶子，熟得不一样快。梗要炒久一点，叶子快熟，所以最好是把它们分开。炒的时候梗先下去，翻炒个十几二十秒，再把叶子放进去，这样最后出锅的时候，梗熟了，叶子也不会炒过头。

还有一个很多人都不知道的办法，就是炒菜用的油。你在家要是只用一种植物油，炒出来的菜总感觉差点意思。饭店里炒青菜，很多时候用的是混合油，里面会掺一些猪油。猪油有个好处，它包裹性比植物油好，菜叶子下锅之后，能被油更好地裹住，水分不容易流失，颜色也就更容易保持。家里如果没有现成的猪油，切几片五花肉或者肥肉下锅，把油煸出来，用那个油炒，效果也是一样的。

炒的时候，有个小动作很重要。火开到最大，油热了，蒜末爆香，菜梗先下去，翻炒几下，再把叶子倒进去。等菜叶稍微变软了，沿着锅边淋一点点开水进去，不用多，小半碗就够了。注意，一定要是开水，不能加凉水。锅很热，开水倒进去会立马变成水蒸气，这个蒸气能一下子把菜的表面烫熟，缩短了菜在锅里翻炒的时间，也就减少了出水变黑的可能性。盐要到最后快出锅的时候再放，放早了也会把菜里的水分腌出来。还可以捏一点点白糖进去，不是为了吃出甜味，就是提个鲜，也能让菜梗保持那种脆劲。要是家里有高度白酒，出锅前沿着锅边滴几滴，那效果更是不一样，酒气一蒸发，能带走锅里多余的水汽，炒出来的菜颜色会更亮。

整套动作下来，从菜下锅到关火盛出来，尽量控制在一分钟之内。看到叶子刚塌下去，还没大量出水的时候，就得赶紧出锅了。装到盘子里之后，菜本身的余温还会继续加热，所以出锅稍微生一点点都没关系，等端上桌吃的时候，火候正好。

如果你的灶火力确实太弱，上面这些方法试了效果还是不太好，那还有个更省事的办法，基本上能保证次次成功。就是烧一锅水，水里放点盐和油，水开了之后，把空心菜放进去烫一下，时间很短，大概二十到三十秒就捞出来，马上过一下凉水，最好是冰水。这样烫过的菜已经熟了，而且颜色被固定住了。锅里重新烧油，爆香蒜末，把烫好的空心菜倒进去，只需要大火快速翻炒十几秒，加点盐调味就能出锅。这么做，对火候的要求就低了很多，炒出来的菜颜色和口感都能保持得不错
