现在来做锦绣拼盘。取一只白瓷圆盘,先以翠绿的黄瓜片铺底,切成均匀的半圆,层层叠叠,宛如荷叶田田。接着将酱牛肉切成薄片,码成扇形,边缘缀上金黄的蛋皮丝,细如发丝,在光下闪着微光。正中摆放焯过水的西蓝花,翠色欲滴,旁边点缀几片胡萝卜雕成的梅花。最妙的是那碟蘸料,蒜末、香醋、芝麻油调匀,淋上一勺滚烫的红油,“滋啦”一声,香气四溢。最后撒上少许白芝麻和香菜末,红的、绿的、黄的、褐的,交错辉映,恰似一幅锦缎铺陈。这道拼盘,既赏心悦目,又清爽开胃,是家宴上最得宠的头牌。
