蒸好的糯米面团取出,放在撒有熟黄豆粉的案板上,稍晾凉一会儿,等面团不烫手时,用擀面杖将面团擀成薄片。擀的时候要注意力度均匀,尽量擀得薄一些,这样卷出来的豆面卷子层次会更丰富。
擀好的薄片上均匀地撒上一层熟黄豆粉,如果喜欢吃甜,可以再撒上一层薄薄的白糖,在均匀地涂抹一层豆沙馅,涂抹的时候注意不要涂得太厚,以免卷的时候容易散开,然后从面片的一端开始,慢慢将面片卷起来,卷的过程中要稍微用力,使卷起来的卷子更加紧实。卷好后,用刀将卷子切成大小均匀的小段,豆面卷子就制作完成了。
