第三道:【干煸豆角】—— 焦香四溢,唤醒沉睡的味蕾
推荐理由: 夏天食欲不振的时候,这道菜是“下饭神器”。干煸的做法能最大程度保留豆角的钾元素,口感焦香有嚼劲,越嚼越香。
1. 沥干水分:豆角洗净后一定要彻底沥干表面水分,否则下锅会炸锅溅油,容易烫伤。
2. 中小火慢煸:锅里多放点油,转中小火慢慢煸豆角。要有耐心,一直煸到豆角表面起皱、呈虎皮状,这一步是干煸的灵魂。
3. 呛香提味:干辣椒和蒜末爆香后,把豆角回锅大火快炒,加盐和生抽,锅气十足。如果最近上火、嗓子疼,可以不放辣椒,做成蒜香口味也一样好吃。

1. 土豆去淀粉:土豆切条后放清水里洗两遍,去掉表面淀粉,炒的时候不容易粘锅,口感更清爽。
