第五名：西兰花

推荐吃法，蒜蓉西兰花。这道菜几分钟就能搞定，既解馋又健康，蒜香浓郁，清脆爽口。

食材：西兰花1颗，大蒜：5~6瓣（蒜多才香！）食用油、盐、蚝油（可选）、水淀粉（可选）

做法：1处理西兰花（关键一步）把西兰花切成小朵，放入盆中，加入一勺盐和少许面粉，用清水浸泡10分钟。这样能把藏在缝隙里的小虫子和杂质彻底泡出来，然后再冲洗干净沥干备用。

2. 焯水保持翠绿锅中烧开水，水开后加入一小勺盐和几滴食用油（这是西兰花保持翠绿的秘诀）。倒入西兰花，大火焯烫1分钟左右即可捞出。千万不要煮太久，否则口感就不脆了。捞出后最好过一下凉水，这样口感更爽脆。

3. 爆香蒜末，把大蒜拍扁切成细腻的蒜末。锅里倒适量油，油温五成热时，转小火，先倒入一半的蒜末，慢慢煸炒出浓郁的蒜香味（注意别炒糊了）。

4. 快速翻炒倒入沥干水分的西兰花，转大火快速翻炒。加入适量的盐和少许蚝油提鲜，翻炒均匀让西兰花入味。

5. 出锅前注入灵魂，临出锅前，把剩下的一半生蒜末倒进去，再简单翻拌几下立刻关火装盘。这一步叫“金银蒜”，能让蒜香味更有层次感，味道绝了！

第4名：豆芽

推荐吃法，酸辣绿豆芽。这道菜绝对是米饭杀手！不仅便宜，而且吃起来清脆爽口、特别开胃。

食材：绿豆芽：300~400克，干红辣椒：5~8个（根据吃辣程度调整）花椒：一小把（灵魂香料，不建议省）大蒜：2瓣切片生姜：2片切丝，食用油、生抽、香醋（或陈醋）、盐、白糖、鸡精（可选）

做法：1清洗控水

（关键）：绿豆芽摘洗干净，沥干水分备用。如果家里有漏勺，建议提前把豆芽放在漏勺里，这样下锅时能迅速倒入，动作更利索。

2爆香底料：锅烧热后倒适量食用油，油温五成热时转小火，放入花椒、干辣椒段、蒜片和姜丝，慢慢煸炒出浓郁的香辣味。

3大火快炒：倒入绿豆芽，立刻转最大火快速翻炒。沿着锅边淋入一勺生抽和一勺香醋，继续大火猛翻。

4调味出锅：豆芽稍微变软（大约翻炒1分钟左右），加入少许盐和一点点白糖提鲜（白糖能中和过度的酸味）。再次快速翻炒均匀，大概十几秒后即可关火装盘。

食材：牛腩，西红柿：3~4个，洋葱半个、生姜几片、大葱一段，八角1个、香叶2片、桂皮一小块（香料不宜多，以免抢了番茄的鲜味），食用油、生抽、老抽、料酒、冰糖、盐、番茄酱（秘密武器）

做法：1牛腩焯水去腥，把牛腩切成麻将大小的方块，冷水下锅。放入几片姜和一勺料酒，大火煮开后撇去浮沫，捞出用温水冲洗干净，沥干备用。（注意用温水洗，冷水会让热牛肉收缩变柴）。

2处理西红柿（分两次放），这是汤汁浓郁的关键！把西红柿顶端划十字，用开水烫一下去皮（嫌麻烦也可以不去），然后切成小块。把它们分成两份：一份切碎一点，一份切大块。

3 炒糖色与底料，锅里倒少许油，放入几颗冰糖小火炒出焦糖色（或者直接下一步省略炒糖色），倒入沥干的牛腩块，中火煸炒至表面微微焦黄，逼出多余的牛油。接着加入葱姜、八角、香叶、桂皮炒出香味，淋入1勺料酒、2勺生抽、半勺老抽翻炒均匀上色。

4第一次放西红柿（熬汤底），把切碎的那份西红柿倒进锅里，和牛腩一起翻炒。多炒一会儿，边炒边按压，直到西红柿完全软烂成泥，炒出红红的汤汁。这时候可以加一勺番茄酱，能让汤色更红亮，味道更浓郁。

5.慢炖入味，往锅里加入足量的开水（一定要没过食材，中途尽量别加水），大火烧开后转小火，盖上锅盖慢炖 1到1.5个小时，直到牛腩变得软烂。

6第二次放西红柿（增加口感），当牛腩炖得差不多时，把剩下的大块西红柿倒进去，同时加入适量的盐调味。继续盖盖炖煮10~15分钟。这样既能保留西红柿的果肉口感，又能让汤里充满新鲜的果香。

7大火收汁，最后尝一下咸淡，如果汤汁还比较多，可以开大火稍微收一下汁（不用收太干，留点汤拌饭是灵魂！），撒上一把葱花或香菜即可出锅。

第2名：红薯

推荐吃法，红薯南瓜小米粥。红薯的温柔打开方式！南瓜和小米也是养胃的黄金搭档，三者搭配在一起，不仅颜色金黄诱人，口感更是香甜顺滑。

食材：小米，红薯：1个，南瓜，枸杞

做法；1. 处理食材，小米用清水轻轻淘洗1~2遍即可，千万不要用力搓洗，否则表面的营养物质会流失。把红薯和南瓜去皮，切成滚刀块或者稍微小一点的丁（切小一点更容易煮烂，口感更绵密）。

2. 开水下锅（关键一步），砂锅或汤锅中加入足量的清水，大火烧开。水开后再倒入小米。这样不仅能防止小米糊底，而且更容易煮出厚厚的米油。

3. 放入粗粮同煮，再次煮沸后，把切好的红薯块和南瓜块放进去。用勺子搅拌一下，防止粘锅。

4. 文火慢熬，转中小火，盖上锅盖留一条小缝（防止溢锅），慢慢熬煮 20~30分钟。期间记得偶尔用勺子顺着一个方向搅动几下，这样能让粥的口感更加粘稠顺滑。

5. 点缀出锅，看到小米开花、汤汁变得浓稠，红薯和南瓜用勺子一压就成泥的状态时，撒入洗净的枸杞，再煮个1~2分钟就可以关火了。关火后可以焖5分钟，米油会更丰富。

第1名：大蒜

推荐吃法，腊八蒜。一年四季都能随时做出来，做好的美食通体碧绿、酸辣脆爽，看着就让人食欲大开。

食材：紫皮大蒜，酿造米醋，冰糖，密封玻璃罐

做法：1剥蒜处理：把大蒜剥去外皮，切掉底部较硬的根须（这样醋更容易渗入）。挑出有伤痕或发软的坏蒜瓣，只留饱满结实的。全程不需要水洗，如果实在觉得脏，洗完后必须彻底晾干表面的生水。

2装罐：将蒜瓣放入干净无油的玻璃罐中，如果喜欢酸甜口，可以按照“一层蒜、一层冰糖”的方式铺好。

3倒醋：倒入米醋，醋的量一定要完全没过所有蒜瓣。
