现在来做咸鱼茄子煲。先把长茄子切成滚刀块,撒少许盐腌制十分钟,挤掉黑水,这样炸时少吸油。咸鱼用温水泡软后撕成小条,五花肉切薄片,蒜姜切末,干辣椒备好。热锅多油,六成热时下茄子炸至金黄微皱,捞出沥油。锅里留底油,煸香五花肉至出油,再下咸鱼条炒出焦香,加入姜蒜末、干辣椒爆香,淋一勺料酒、两勺生抽、半勺老抽、一勺蚝油,翻炒均匀。倒入炸好的茄子,加一小碗高汤(或清水),大火烧开后转中火焖五分钟。最后勾薄芡,撒入葱花和少许白胡椒粉,翻匀即可出锅。盛入烧热的砂锅,滋啦作响,咸香浓郁,茄子吸饱了咸鱼的鲜和肉脂的润,软糯下饭,配一碗热米饭最是满足。
