食材准备： 新鲜猪肝300克、葱姜蒜适量、小米辣2个、香菜少许、生抽2勺、香醋1勺、白糖半勺、辣椒油1勺、花椒油少许、料酒适量。

详细做法：

第一步，猪肝切成薄片，放入清水中反复抓洗，直到水变清澈，这一步是去腥的关键。洗好后加一勺料酒、几片姜，腌制15分钟。

第二步，锅中烧水，水开后放入猪肝片，焯水约30秒至变色，迅速捞出过凉水，这样口感才会嫩滑不柴。

要说最下饭的硬菜，这道土豆胡萝卜炖排骨绝对排第一。排骨软烂脱骨，土豆绵密吸满了汤汁，胡萝卜炖得甜丝丝的，光用汤汁拌饭就能吃两碗。

食材准备： 排骨500克、土豆1个、胡萝卜1根、葱姜适量、八角1个、桂皮1小块、生抽2勺、老抽1勺、蚝油1勺、料酒1勺、盐适量。

详细做法：

第一步，排骨冷水下锅，加入姜片和料酒，大火煮开后撇去浮沫，捞出冲洗干净备用。

第二步，锅中倒少许油，放入冰糖小火炒出糖色，然后倒入排骨翻炒均匀，让每块排骨都裹上糖色，再加入葱段、姜片、八角、桂皮炒出香味。

第三道：虾仁蒸卧鸡蛋——鲜嫩细腻，老人孩子都抢着吃

这道菜看着精致，其实做起来超级简单。蒸出来的鸡蛋羹像布丁一样嫩滑，上面铺着弹牙的鲜虾仁，好看又好吃，营养还特别丰富，蛋白质拉满。

食材准备： 鸡蛋3个、鲜虾仁8-10个、温水适量（蛋液的1.5倍）、生抽1勺、香油几滴、葱花少许。

详细做法：

第一步，虾仁去虾线，加少许料酒和姜片腌制5分钟去腥，然后焯水至变色捞出备用。

第二步，鸡蛋打入碗中，加入1.5倍的温水（这是蛋羹嫩滑的秘诀），用筷子轻轻搅散，过一遍筛去掉气泡，这样蒸出来的蛋羹表面光滑如镜。
