每当夏日来临，延吉的大街小巷总少不了冷面的身影，这是延吉人对抗盛夏燥热的法宝。
延吉，是全国最大朝鲜族聚居地吉林省延边朝鲜族自治州的州府所在地，独特的地理和人文背景，孕育出延吉冷面独特的色彩美学：
延吉冷面的黑色，来自于面条中的荞麦面和橡子粉。黄瓜、西瓜、黄牛肉、蛋皮丝、泡菜、辣椒酱……延吉冷面的辅料，当地人叫冷面帽。五彩缤纷的冷面帽，仿佛当地少数民族色彩炽烈的衣裳。
In Yanji, capital of the Yanbian Korean autonomous prefecture in Jilin, a bowl of cold noodles is a beloved summer dish. The iced broth and chewy noodles, with their sweet-and-sour flavors, reflect the cooking traditions of this vibrant city.
