11月5日,科普中国发文解读。文章表示,这种吃法之所以能爆火,除了谐音梗,大家还存在猎奇心理。猪肝的醇厚、薯片的酥脆、大蒜的辛辣,形成了一种复杂的味觉体验。

据“科普中国”公众号文章介绍,猪肝是这个“邪修美食”中营养密度最高的部分。它每100克含蛋白质约 19 克、铁23.2毫克、维生素A约6502微克(相当于成年女性每日所需的10倍),还能提供丰富的维生素 B₂、B₁₂、叶酸和锌,有益于预防缺铁性贫血、维护视力与皮肤健康。
虽然优点突出,但缺陷也不示弱:
慢性病风险:每100克猪肝里含有275毫克嘌呤,属于高嘌呤食物。过量食用可能导致血脂升高、痛风发作。
维生素A过量:虽然含量丰富,但稍微多吃点就容易蓄积中毒。每天维生素A可耐受最高摄入量是3000微克,而50克的猪肝就超量了。
Among the three ingredients, pork liver is the most nutrient-dense. It may help prevent iron-deficiency anemia and support vision and skin health. However, excessive consumption can lead to elevated blood lipid levels and trigger gout attacks.
薯片是妥妥的“高油高盐”食物,长期食用有增加肥胖、高血压、心血管疾病的风险,营养几乎可以忽略不计。
Potato chips, on the other hand, are linked to increased risks of obesity, high blood pressure, and cardiovascular diseases when consumed regularly. They offer little to no nutritional value.
大蒜的健康功效主要来自大蒜素和硒,经研究发现,大蒜素有抗菌、抗氧化、调节血脂等作用,而硒的抗氧化能力很强,少量摄入对心血管健康有益。但过量或空腹吃大蒜容易刺激消化道黏膜,导致肠胃不适。
Garlic, meanwhile, can benefit cardiovascular health when consumed in moderation. But eating too much, especially on an empty stomach, may irritate the digestive tract and cause discomfort.
总的来说,作为一种猎奇的“尝鲜”体验,“肝脆薯了蒜了”偶尔少量尝试一次,对身体健康的成年人来说,不会造成长期的健康危害。但不建议将其作为正餐或解馋的零食经常吃,避免高油高盐对身体的持续负担。
