凉拌素什锦的制作方法
食材:花生30克,芹菜200克,黄瓜150克,胡萝卜100克,红尖椒80克,银耳30克。
用料:蒜瓣10克,八角2克,花椒1克,香油5克,白糖1克,盐适量,油适量。
第一步,花生剥去外壳,洗净沥干放入锅中,倒入没过花生的水量,开大火滚煮,烧开后放八角,花椒,盖上锅盖转小火煮上20分钟,花生煮熟后关火。
第二步,煮好的花生倒入碗盆里,加适量盐搅开,将花生泡在汤里,泡上半个小时,使其能够充分入味。
第三步,银耳泡发,去蒂撕成小朵块,胡萝卜和黄瓜洗净切胡萝卜丁,黄瓜丁,芹菜择去叶子,洗净切小段,红尖椒洗净去籽,切红椒片,大蒜去皮捣成蒜末。
第四步,锅中倒水烧开,将胡萝卜丁,银耳块,芹菜段一起放入沸水中,焯水2分钟,焯熟捞出沥干,晾凉。
第五步,捞出泡好的花生米,和黄瓜丁,胡萝卜丁,银耳块,芹菜段,红椒片放入碗盆里混合,加蒜末,香油,盐调味,搅拌均匀后即可装盘,这道素什锦就做好了。
操作贴士:
制作这道菜呢,食材是完全可以自由搭配的,不一定非得选用以上这六样,里面还可以放一些豆腐干,西兰花,蘑菇之类的,反正是自家人喜欢的食材都可以。
花生最好选用新鲜的,味道特别的香嫩,不过在煮的时候,先不要往里放盐,不然花生的颜色容易煮黑,煮完再放盐,泡一泡就会入味的。
香油的量一定要适当多放,是非常提味的,拌好之后把菜放入冰箱稍微冷藏下,口感会更佳。
