接着在锅里加入适量的油,放入冰糖小火慢慢熬化。待糖色变成红色时,倒入鹅肉快速翻匀,让每一块鹅肉都裹上一层红亮的糖色,这样做出来的鹅肉会更入味。
等鹅肉全部上色后,就往锅里加入之前调好的调味汁,继续翻炒均匀。这时可以尝一下味道,如果不够咸的话,就再加点盐。接着就可以开大火收汁了。
当汤汁快收干时,就可以把鹅肉盛到盘子里备用。
接下来就是最刺激的环节了,往锅里加入大量的油,烧至八九成热时,把鹅肉倒进去快速翻拌几下,再往里面加入高粱酒,这时候一定要注意,因为酒精遇高温会瞬间爆发出大量火焰,所以大家千万要做好安全措施,不要被烫伤。
等火苗变小后,就把鹅肉连同汤汁一起转移到餐桌上,再将剩下的鹅杂也一起倒进去。最后撒上葱花和白芝麻点缀增香即可上桌。
