准备半只土仔鸡,先剁成小块,然后用清水浸泡去血水。锅中烧水,冷水放入鸡块,加入几片生姜,再打入两个鸡蛋,大火煮开后转中小火焖煮 10 分钟,捞出备用。
接着准备辅料:小米辣切段、大蒜拍扁切碎、姜切成菱形片,大葱白切成斜片备用。
开始炒制,起锅热油,倒入葱姜蒜爆香,再加入小米辣翻炒均匀。接着把鸡肉倒进来快速翻炒几下,加一勺生抽提鲜增色,一勺蚝油上色提鲜,翻炒至上色后,加入适量清水,水量没过食材即可,盖上锅盖大火煮开。
汤汁沸腾后转中小火慢炖 10 分钟。10 分钟后,打开锅盖,加入一勺老抽调色调味,一勺白糖提鲜解腻,快速翻炒均匀,让每一块鸡肉都裹上调料,最后撒入青红椒圈,快速翻炒几下就可以出锅了。
