一锅咕嘟冒泡、香气四溢的猪肉炖粉条,不可多得的家常下饭美味。肥瘦相间的猪肉吸饱了汤汁,软糯的粉条裹满浓郁酱香,舀上一勺,连汤汁都能拌着米饭吃三大碗!这道经典家常菜,一点都不难做,跟着我的步骤,轻松制作美味!
食材准备:
五花肉1斤,红薯粉条1把,大白菜半个,大葱1个,生姜1块,大蒜4瓣,八角2颗,桂皮1小段,香叶2片,干辣椒2个,黄冰糖3颗,料酒2勺,生抽3勺,老抽1勺,盐适量,鸡精少许。
制作步骤:
1.五花肉用清水洗净,切成小一点的块。冷水下锅,加入生姜和1勺料酒,大火烧开后煮3分钟,撇去表面浮起的血沫。捞出后用温水冲洗干净,沥干水分。
2.粉条用温水泡软;大白菜洗净,用手撕成大片。大葱切成长段,生姜切片,大蒜用刀拍扁、去皮。
3.锅洗净烧热,倒入少许食用油,放入冰糖。开小火慢慢加热,用铲子不停地搅拌,变为漂亮的枣红色,冒起密集的小泡泡。
4.糖色炒好后,迅速倒入焯好水的五花肉块,转中火快速翻炒,让每一块肉都均匀地裹上红亮的糖色。
5.加入准备好的葱段、姜片、蒜瓣、八角、桂皮、香叶和干辣椒,继续煸炒2分钟,香料的香味被充分激发出来。沿着锅边烹入1勺料酒,大火快速翻炒几下,去除异味。
6.加入3勺生抽调味,1勺老抽增色,翻炒均匀,让肉块充分吸收酱料的颜色和香味。锅中加入足量的开水,没过猪肉。
7.大火将汤汁烧开后,转成小火,盖上锅盖,炖煮40分钟。打开锅盖,尝一下汤汁的咸淡,然后加入适量的盐,进行调味。
8.下入提前泡软的粉条,用筷子轻轻拨散,让它们充分浸泡在肉汤里。白菜加入,铺在肉和粉条的上面。盖上锅盖,保持中小火,继续炖煮15分钟。直到粉条变得晶莹剔透、柔软入味,白菜也炖得软烂可口。
9.揭开锅盖,转成大火,稍微收一下汁,让汤汁变得更浓稠一些。撒上少许鸡精,翻炒30秒。关火,撒上一些切好的新鲜葱花或者香菜段作为点缀。一锅热气腾腾、香气四溢、色泽红亮的家常猪肉炖粉条就可以盛出上桌啦!
