首先准备一盆清水,然后将红豆放进去浸泡一个小时以上。因为红豆比较难煮熟,所以提前浸泡可以缩短烹饪时间。

接着我们把大米淘洗干净,然后放入电饭煲中。之后往里面加入适量的水,然后按下煮饭键开始煮饭。
紧接着我们就可以准备配料了,先准备一个小碗,在碗中打入两个鸡蛋,然后用筷子搅拌均匀备用。
锅内烧油,油热后倒入打好的鸡蛋液,等底部凝固以后,我们用铲子给它翻个面,继续煎至另一面金黄,然后盛出备用。
这个时候红豆也应该泡好了,我们将红豆倒进锅里,开大火进行翻炒,炒干红豆表面的水分。

然后往锅里加入没过红豆的热水,并且在里面撒入一小把食盐,这样可以让红豆更加软烂。盖上锅盖,开中小火慢炖 20 分钟左右。
20 分钟过后,打开锅盖,可以看到红豆已经煮的非常软烂了,这时我们再把之前煎好的鸡蛋也倒进来,然后加入一大勺生抽,翻拌均匀,让每粒红豆都裹上调料,这样可以让这道菜的味道更上一层楼。
等到汤汁快收干的时候,我们的红豆就做好了,把它盛出来放在米饭上面,这道香甜软糯的红豆饭就完成了。
