大家好,我是梅子,咱北方人呐,对面食那可是特别喜欢。馒头、面条还有大饼,这都是经常吃的。不过比起这些,我更爱吃炒饼。今天分享给大家一个家常炒饼的做法,这炒饼食材搭配很随意,家里有啥就放啥,菜和主食能一锅做出来,既简单又省事。要是不知道吃啥,就试试做炒饼呗。
准备一颗洋白菜,也有的地方叫它包菜,先将根部去掉,之后给它一切两半,放入淡盐水中,给它多清洗两遍,清洗干净以后,改刀切成细丝放入帘子里面控一下水分,再准备半根胡萝卜,去掉外皮也给它清洗干净,给它擦成细丝备用。
再根据家里人口的数量准备一点饼丝,我是用买现成的饼丝,不喜欢的也可以自己烙,自己烙饼时,面饼不要烙得太干,否则炒出来的饼丝口感会太硬不好吃。之后切点葱花、姜末备用。
配料全部整好以后,锅中放入一点食用油,下入葱花,姜末,给它爆香,之后放入控干水分的洋白菜,还有胡萝卜丝,大火给它翻炒均匀,炒至圆白菜丝变软塌,大概需要2分钟左右。圆白菜炒软后,体积会变小,往里加 20 克生抽、5 克老抽、3 克盐、3 克鸡精还有 10 克蚝油,翻炒得匀乎点,好让蔬菜把调料的味道都吸进去。接着把饼丝平平整整铺在蔬菜上头,盖上锅盖焖个 1 到 2 分钟,让饼丝把蔬菜的汤汁都吸进去,变得更软乎。得注意喽,焖的时间别太长,要不饼丝就太软烂了,口感可就不好啦。
