羊肚菌可以烧、扒、炒。过敏者忌食。
①红烧羊肚菌羊肚菌泡洗干净;火腿、青椒切片备用。锅内油热放豆瓣酱炒香,加高汤、火腿、青椒、羊肚菌、酱油烧几分钟。此方有补脾胃、助消化、益精气等功效。
②羊肚菌鱼片汤羊肚菌干品泡发洗净,鲜鱼宰杀洗净切片,锅内油热,放入姜片、蒜片煸香,加适量水、料酒、盐烧至沸腾,放羊肚菌后放鱼片,煮沸后调味即可。此方有清热、和昌消食等功效。
