立秋后，板栗、花生靠边站，吃这种“回阳菜”，又糯又鲜，怎能错过

立秋一到，很多人还没反应过来，胃口先给秋天打了个盹。山东这边的老话讲得实在，热天一过，身体就开始讲究个收敛，不是越凉快越好，而是要吃得顺口、吃得温和，别一上来就猛灌冰饮、猛啃生冷。沙葱炒鸡蛋、毛豆蒸菌菇肉饼、青椒炒阳荷，这三样看着家常，里头门道不少，都是适合初秋这个节骨眼端上桌的菜，既有鲜味，也有一股子温润劲儿。

说到底，立秋后最怕什么？不是吃少了，是吃乱了。白天太阳还在，早晚已经有点凉，暑气没退干净，湿气又开始往身上粘，很多人就会出现胃口差、四肢发沉、懒得动、饭吃两口就饱的情况。中医里讲秋季要注意养收，但刚入秋这阵子，不能一下子就走到太寒太凉的路子上，温而不燥的菜最合适，既能把脾胃叫醒，也不至于把身体吃得火气乱窜。

先说沙葱。这个东西在不少地方不算常见，但懂吃的人知道，它有股很特别的葱香味，夹着点野菜的清爽。沙葱性温，适合在立秋后拿来炒鸡蛋，简单直接，最见功夫。沙葱摘洗干净切段，鸡蛋打散，热锅热油先把蛋液炒出来，再下沙葱猛火快炒，最后合在一起，盐一调，立马出锅。这个做法很朴素，像山东人做饭那股劲儿，不花哨，讲究的是火候和原味。

网上不少营养资料也提到，葱类植物里含有挥发性成分，闻着冲，吃着香，开胃这事儿确实有帮助。鸡蛋就更不用多说了，优质蛋白、脂肪、维生素，家里老人孩子都能吃。沙葱配鸡蛋，不是啥高深菜，但它稳，稳里带香，香里带暖。早上胃口不开的时候来一盘，配一碗小米粥，山东大汉都能多扒两口饭。

再看毛豆蒸菌菇肉饼，这道菜就很有家庭味儿。毛豆剥出来，颜色绿得利索，香菇切碎和肉末拌在一起，顺着一个方向搅打上劲，做出来的肉饼才不会柴。盘底铺肉馅，上面撒一层毛豆，蒸二十五分钟，掀锅那一下，香味是往鼻子里钻的。这个菜做法不难，但特别适合一家老小同桌吃，老人能吃软，孩子也愿意下筷子。

毛豆这东西，夏末秋初正当时。民间常说毛豆是健脾的好食材，现代营养学里也能找到对应点，它含有植物蛋白、膳食纤维、钾、镁等营养成分，饱腹感也不错。香菇里有多糖类物质，鲜味足，搭配肉末后，既能提香，也不会让肉味显得发腻。猪肉末提供蛋白质和脂肪，蒸出来比煎炸更清爽。对咱家里这种上有老下有小的饭桌来说，蒸菜有个好处，省油省心，锅里一蒸，灶台不乱，屋里还满是饭香。

说句山东人都懂的话，秋天吃饭不能光图痛快，还得图个实在。毛豆蒸菌菇肉饼就属于那种实在菜，肉不抢戏，豆子也不打架，吃下去肚里踏实。尤其是家里老人，牙口一般的时候，蒸出来的肉饼软糯，连汤汁都能拌饭，饭桌上最怕的就是谁都不爱吃，这道菜一端上来，基本没人挑。

再说青椒炒阳荷，这个就更稀罕一点。阳荷不是天天都能见着的菜，很多地方一年也就这短短一阵子能吃到。它外形有点像嫩姜，但味道更特别，切开以后带着一股清香和微辣，脆生生的。处理的时候要先撕老皮，切薄片，配青椒和蒜片一起快炒，火候得利索。这个菜最怕炒过头，一旦久了，脆感没了，香气也散了，等于白忙活。

阳荷在一些地方被当成时令野菜，讲究的就是一个新鲜。很多资料里都提到，它适合做清炒、凉拌、配肉或者配青椒。青椒本身也有开胃作用，颜色一绿一白一红，端上桌就有食欲。对初秋容易犯困、觉得身上沉的人来说，这类脆嫩带香的菜，确实比厚重油腻的更对路。说白了，秋天不是一味进补的时候，先把脾胃哄舒服了，后面吃啥都顺。

现在不少人喜欢追网红菜，今天这个爆款，明天那个爆款，拍出来好看，吃起来未必适合自己。可像沙葱、毛豆、阳荷这种应季食材，有时候比大热菜更靠谱。因为时令这东西，不是摆设，是老天爷给的节奏。春吃芽，夏吃瓜，秋吃果，冬吃根，老祖宗把这话传下来，不是没道理。到了立秋这会儿，吃点温而不燥的小菜，胃里舒服，身上也轻快。

还有一个很多人容易忽略的点，就是秋天的饮食很怕一冷一热乱来。早上空腹喝冰咖啡，中午辣得满头汗，晚上再来一顿油炸烧烤，这样折腾，脾胃先受不了。沙葱炒鸡蛋是热锅快炒，毛豆蒸菌菇肉饼是温火蒸熟，青椒炒阳荷是旺火快出，三道菜都不拖泥带水，吃的就是食材本味。这样的做法，和秋天收敛的气息是对得上的。

家里有老人和孩子的，更能体会这种菜的好。老年人到了这个季节，常见的反应就是吃得少、睡得浅、腿脚发凉。孩子呢，暑假一过，作息一收，胃口也容易起伏。饭桌上有一盘沙葱炒鸡蛋，香味一出来，孩子会忍不住伸筷子；有一盘蒸得软糯的毛豆肉饼，老人吃着省力；有一盘脆嫩的阳荷炒青椒，嘴里也不寡。说到底，家常菜能不能立住，看的就是能不能让一家人都愿意动筷子。

另外，立秋后吃这些菜，还有个现实好处，就是做起来不费劲。沙葱炒鸡蛋十分钟能上桌，毛豆蒸菌菇肉饼提前备好，上锅一蒸就行，青椒炒阳荷更是快手。咱山东男人下厨，讲究一个稳当，白天上班累了，晚上回家不想在灶台前打持久战，这种菜最省心。菜不难，火候不乱，家里老人孩子还夸一句，心里也舒坦。
