菜品今日分享：榨菜肉丝汤、肉丝炒蒜苗、鳝鱼金针菇

肉丝炒蒜苗

材料：蒜苗400克、猪肉150克、油盐适量、生抽酱油1汤匙、料酒1/2汤匙

做法：

1.准备好所需材料，将蒜苗择去老叶，用流水冲洗干净

2.将蒜苗前端切去1厘米不要，蒜苗前端有沙土很难清洗干净，再将蒜苗切成寸段

3.将蒜苗的叶部和梗部分开放，炒制时先炒蒜苗梗，再炒蒜苗叶，这样成熟度一样，蒜苗的叶子不会炒过火

4.将猪肉切成丝，锅加油烧热，下入肉丝翻炒至颜色变白，淋入生抽、料酒将肉丝翻炒上色

5.下入蒜苗梗快速翻炒几下，下入蒜苗叶，盐，快速翻炒均匀，关火，盛出装盘即可

鳝鱼金针菇

食材：鳝鱼段 150克、金针菇 300克、葱花、豆瓣酱 1汤匙、盐、蒜蓉

做法：

1、金针菇剪去根部洗净备用；

2、锅中放油，烧至六成热时依次放入蒜蓉和郫县豆瓣酱，炒30秒左右；

3、豆瓣酱炒香后放入600毫升的清水；

4、大火烧开后放入金针菇；

5、煮开后加入鳝鱼片，用筷子快速翻动，让鳝鱼片在汤中散开，煮1分钟，当鳝鱼片变色后关火，盛出后撒上葱花即可。

凉拌豆腐丝

材料：豆腐丝200克，葱白半根，黄瓜1根，生抽2勺，醋2勺，香油适量，花椒适量

做法：

1.葱和黄瓜切丝备用。豆腐丝切成小段

2.炸花椒油，炸好后过滤掉花椒粒。

3. 将切好的三种丝放在盘中，加生抽，醋，香油，花椒油拌匀即可。

猪大肠

食材：猪大肠、彩椒1个、胡萝卜、葱姜蒜、八角、花椒、蚝油、生抽

做法：1、肥肠冷水下锅，加入1个八角、2片生姜、1段大葱、几粒花椒，大火将水烧开后，撇去浮沫，改中小火煮15分钟左右。肥肠煮的筷子能扎穿时，即可出锅捞出，沥水，切段，备用。

2、彩椒切片，胡萝卜切片，葱姜蒜切末。

3、 锅里倒少许油，倒少许冰糖炒糖色，小火炒，待到糖起泡泡，下入肥肠煸炒，炒到色泽金黄；

4、加调料：盐，生抽，葱姜，蒜片，继续煸炒两分钟。

5、加入胡萝卜，彩椒放进去炒大概2分钟，水淀粉勾芡，撒上蒜末装盘即可。

蒜香蒸茄子

做法1、茄子切5至6厘米的长段，隔水蒸熟，取出放凉一些(手能承受的温度)，撕成条状备用，准备料汁。大蒜，生姜，青椒切成碎末，尽量碎一点。

2、准备一个小碗，倒小半碗生抽，一勺料酒(吃饭用的主餐勺)，十来滴鱼露，半勺白砂糖。

3、热锅倒油，油热入生姜末翻炒出香味，倒入刚才调好的料汁，料汁冒泡关火，倒入大蒜末青椒末拌匀，浇在茄子上就好了。

面筋炒青菜

食材：青菜、油面筋、香菇、水、油、糖、盐、鸡精

做法：

1、香菇先泡在滚开水里备用，青菜洗净切碎，油面筋拌碎。

2、泡好的香菇切成条状和青菜面筋拌在一起。

3、油锅里放一勺油，青菜面筋香菇倒下去大火翻炒几下，倒入一大碗水，加入适量糖、盐、鸡精，翻炒均匀后加盖闷烧一会。直到水基本收干就能盛盘了。

丝瓜虾仁

食材：活虾200g、丝瓜半根左右、葱蒜适量

做法

1、丝瓜去皮，横向切成小段，铺于碟子中。

2、鲜虾洗净、剥去外壳、虾头，蒜瓣切蓉，适量铺在丝瓜段上。

3、将植物油、酱油、盐适量调匀，浇在虾仁上。最后可以加上点葱段装饰。

4、隔水蒸5~6分钟即可。

焖猪肚

食材：猪肚一个，红枣适量，糯米适量，桂圆适量，姜片适量，料酒适量，红糖适量。

做法：

1、 猪肚用面粉和料酒揉搓； 多洗几次把黏糊的东西洗干净 正反面都要洗； 洗好后放在水里焯一下； 准备好食材；

2、 把上面的食材全部灌进去 除了姜片 其实糯米是要泡一下才好入味 我临时想起要加 所以没有泡过；

3、 全部灌好之后 放在电饭锅里煮 加入清水和红糖焖煮四个小时；煮一小时左右 拿筷子戳猪肚 这样汤汁侵入个更加入味好吃；焖煮完成之后 猪肚捞出；汤汁分离；

4、 把猪肚切好，切好的猪肚装盘 再把汤汁浇在上面即可。猪肚尽可能焖煮时间长一点 猪肚子上扎小孔也可以更加入味 糯米最好浸泡再灌在猪肚里。

麻辣豆腐锅

主料：北豆腐1块300克、草菇150克、新鲜红椒2个、葱末20克、姜蓉15克、蒜蓉15克

辅料：花椒20颗、红油豆瓣酱1/2大匙、生抽1大匙、砂糖1小匙、鸡精1/4小匙、白胡椒粉1/4小匙、玉米淀粉30克

做法：

1、锅烧热后加热油，北豆腐切小方块，粘上干的玉米淀粉。保持小火，一边粘一边将豆腐下锅煎。直至煎至豆腐两面微黄色，盛出备用。

2、剩下的油放入花椒用小火炒至焦黄色，捞起花椒。放入红鲜圈，葱末，姜蓉，蒜蓉炒出香味。加入红油豆瓣酱炒出香味。加入切片草菇，翻炒至变色。

3、加入煎好的豆腐，清水250ml，生抽，砂糖，鸡精，白胡椒粉，大火煮开后移入干锅;或是转小火煮至汤汁浓稠即可盛盘。

鱼香白菜粉皮

材料：五花肉、白菜、粉皮、豆豉、郫县豆瓣酱、陈醋、白糖、盐、酱油、生姜

做法：

1、白菜洗净，用手撕成大块，粉皮用剪刀剪成需要的大小，用水泡软。

2、用陈醋、白糖、少许精盐、酱油调成料汁。

3、五花肉切薄片，放入锅中，小火煎至出油。

4、放入生姜片，炒香。

5、放入郫县豆瓣酱、少许豆豉炒香。

6、放入撕好的白菜，撒少许精盐，大火翻炒均匀后，改小火炖5分钟。

7、放入泡好的粉皮，小火炒熟。

8、倒入调好的料汁，大火炒匀即可。

炝菠菜

材料：菠菜适量、干辣椒适量

做法：

1、菠菜洗净放加有盐的滚水中焯熟，捞出沥干水份

2、拌入少许盐

3、锅内烧热油放入干辣椒，花椒粒爆香

4、趁热倒入菠菜上拌匀即可

青椒炒香菇

食材鲜香菇，青椒，郫县豆瓣一小勺，盐适量。

做法

1、香菇和青椒切条。

2、油热后，放一小勺豆瓣炒香，不能太多，只是为了上个色增点香。

3、放香菇翻炒到变软后，放青椒，再炒至香菇有些出水。

4、放盐，不用太多，炒匀就可以了。

香酥藕片

食材：藕1节约400克，白芝麻5克，蒜头1瓣，香菜10克，小红辣椒1个，五香粉5克，家乐香炸粉20克，干淀粉10克，盐2克

做法：1、藕刨去外皮后切成薄片，蒜头切成末，香菜切碎，小红椒切成小圈。

2、藕片入沸水汆烫1分钟，捞出滤水。

3、白芝麻、五香粉、香炸粉、干淀粉、盐一起混合均匀成五香炸粉。

4、藕片正反面粘上薄薄一层五香炸粉。

5、油温6成热，将藕片入油锅中火煎炸至微黄捞出。

6、至油温升至8成热时，将藕片入油锅复炸至呈金黄色捞出，用厨房纸吸去表面的油。

7、倒入煎炸油，下蒜末和辣椒圈煸炒出香味，下香菜末和藕片快速拌炒几下即可。

香辣炒包菜

材料：包菜1棵、油盐适量、葱1段、姜2片、大蒜2瓣、老干妈1汤匙、米醋1/3汤匙、生抽1汤匙、

做法:

1.将包菜叶剥开，放在清水中洗净，捞出沥净水，一定要把水份沥净，否则炒制时炒的就不脆嫩了

2.将包菜叶用手撕成块，将葱切葱花，姜切末，大蒜切片

3.锅加油烧热，下入葱姜蒜爆香，下入包菜，开大火快炒至菜叶稍软，略呈半透明状

4.加入盐、米醋、生抽，1汤匙老干妈，用大火快速翻炒均匀，关火，盛出装盘即可。

烧豆腐

食材：老豆腐1块、青椒1个、红椒半个、秀珍菇适量、木耳少许、色拉油适量、豆瓣酱1勺、蚝油1勺、生抽1勺、盐少许、鸡精少许

做法 ：

1、豆腐切成三角块备用。豆腐用厨房纸吸干表面的水，油温五成热下锅煎。煎至两面金黄捞出控油。木耳用温水泡发备用。

2、青红椒切小块，秀珍菇洗净备用。起锅倒入小半碗水，加入少许水淀粉大火烧开。加入一勺豆瓣酱。

3、加入木耳大火翻炒。倒入青红椒块，秀珍菇，继续翻炒。倒入蚝油，生抽，少许盐，鸡精翻炒入味。起锅装盘。

丝瓜炒蛋

材料： 丝瓜 2根、鸡蛋 3个、盐、油 2汤匙、姜末

做法1.丝瓜去皮切滚刀片，如果家里没有刨子去皮的话，一般卖丝瓜的地方可以帮你去；锅中烧水，水开倒入丝瓜焯水；

2.倒入丝瓜后，水再次开就可以捞出来了。如果想使颜色保持翠绿的话，要用冷水冲凉一下；

.3将鸡蛋打入碗中，加盐，用筷子充分搅打均匀待用。锅里放油3汤匙烧热，将鸡蛋放入锅中炒熟盛出待用；

4.锅中底油，油微热放姜末爆香，倒入焯过水的丝瓜，加盐翻炒；大火翻炒30秒后，就可以加待用的蛋花。一起混炒也不要太长时间，20－30秒就可以出锅了

用料：草鱼350克、酸菜200克

辅料：淀粉5克、食盐3克、食用油40毫升、料酒6毫升、花椒3克、生姜大蒜10克、细香葱、香菜适量鸡精2克、白糖5克

做法：

1、草鱼均刀切片

2、用食盐、料酒、淀粉抓匀腌制半小时

3、大蒜、香葱、香菜、生姜分别处理好

4、酸菜洗净，用清水浸泡1小时，捞起挤干水分切块

5、锅中热油，放入花椒、蒜头、生姜爆香

6、加入酸菜煸炒至出香味儿

7、加入适量清水和白糖调匀

8、待锅中的水烧开，把鱼片放入小火煮片刻把鱼煮熟

9、最后放入鸡精拌匀即可
