一、准备食材（一人食分量）

- 熟透番茄 2个（选沙瓤的更容易出汁）

- 肥牛卷 1小盒（约150g，鲜嫩不柴）

- 鲜面条/挂面/乌冬面 1把（按自己喜好选择）

- 大蒜 2瓣、小葱 1根

- 调味：生抽1勺、番茄酱1勺、白糖半勺、盐适量、白胡椒粉少许

二、详细制作步骤，一步不落超简单

第一步：处理食材，为浓郁汤底打底

番茄顶部划十字花刀，用开水烫10秒，轻松撕去外皮，切成小丁备用。去皮后的番茄汤口感更细腻，没有涩味，喝起来更顺滑。大蒜切成蒜末，小葱切成葱花，简单备菜，几分钟就能完成。

第二步：炒出灵魂番茄汤底，香到流口水

锅中放少许食用油，油热后下入蒜末，小火炒出香味。接着倒入番茄丁，一边翻炒一边用铲子轻轻按压，让番茄慢慢软烂出沙，直到锅里变成红彤彤的浓稠酱汁。

这一步是汤底好喝的关键，一定要炒到番茄完全出汁，再加入1勺番茄酱提色增香，半勺白糖中和酸味，翻炒均匀后，倒入足量的开水，大火煮沸。

第三步：下面煮肥牛，鲜香味立刻溢出

汤底沸腾后，下入准备好的面条，用筷子轻轻搅散，防止面条粘连结块。按照面条的熟度煮制，挂面煮3-4分钟，鲜面条煮2-3分钟即可。

第四步：简单调味，温暖出锅
