红烧排骨炒糖水时用白糖还是红糖？之前都弄错了，难怪总炒糊了

材：排骨、姜、葱、香料（八角、茴香、山奈、桂皮、苹果、丁香、香叶），花椒、盐、味精、白糖、料酒、老抽

做法：1、排骨剁成4厘米的段，放入沸水中除去血水，捞起洗净待用。姜切片，葱洗净去头拴成一结（3根左右）；

2、锅内倒油，待油温还不是很热的时候放入白糖，用小火慢慢把糖炒化；

3、待糖水炒制变为棕红色，且开始出现棕红色的泡沫时，马上把排骨倒入锅中炒匀，接着放入姜片，花椒和香料；

4、炒出香味后加入少许料酒和酱油上色，掺入清水，加入盐和葱结；

5、大火烧开后转至小火慢慢烧至排骨脱骨，然后夹去锅里的葱结和大块头的香料；

6、大火收汁，待汤汁变浓时，加入味精起锅装盘。

烹饪需知1、猪肉烹调前莫用热水清洗，因猪肉中含有一种肌溶蛋白的物质，在15摄氏度以上的水中易溶解，若用热水浸泡就会散失很多营养，同时口味也欠佳；
