吃火锅煮牛肉丸时，刚飘起来不要着急吃。一般来说，当肉类的中心温度达到70℃以上，大部分致病菌会被灭活，可以放心食用。实验显示，当肉丸飘起来后，中心温度只有45.4℃，继续煮5分钟，其中心温度达到了72.3℃。因此，牛肉丸飘起来再煮5分钟更安全。
