酸嘢是地方传统名小吃,是采用当地产的萝卜、黄瓜等时令果蔬,配以酸醋、辣椒、白糖等腌制而成。在全国多地都能看到其身影,但较为受到认可的起源还是广西。
Suan Ye is a traditional local snack made by pickling seasonal fruits and vegetables such as radish and cucumber with vinegar, chili, sugar, and other seasonings. It is found in many regions across China, but it is most strongly associated with Guangxi, which is widely regarded as its place of origin.
虽说没有文字记载,但在地方民间关于广西酸嘢的来历还是有段传说。据说,在秦始皇下令修建灵渠期间,泡菜工艺由当初从外省入桂修建灵渠的工匠及厨师传入,但由于广西气温高、湿气重,泡菜工艺几经改进,就形成了如今广西特有的酸嘢工艺。
Although there are no written records, local folklore in Guangxi tells the story of its beginnings. It is said that during the construction of the Lingqu Canal, ordered by Emperor Qin Shi Huang, craftsmen and cooks from other provinces brought pickling techniques into the region. Due to Guangxi's hot and humid climate, these methods were gradually adapted, eventually evolving into the distinctive Suan Ye of today.
虽然广西各地都有酸嘢,但各地制作工艺还是有所区别,口感味道也各具特色。南宁市场上常见的是南宁酸嘢。南宁酸嘢是用酿造食醋做成,把新鲜的果蔬切成片状或者是块状,然后用酸醋浸没加入点白糖和盐,爱吃辣就加入一些切好的小米辣,一定时间之后,味道就会浸入蔬果当中,十分入味,常见的吃法还会配上一些椒盐。
While Suan Ye can be found in many parts of Guangxi, the pickling techniques and flavors differ from place to place, giving each variety its own character. The most common type sold in Nanning markets is Nanning Suan Ye. Nanning Suan Ye is prepared with brewed vinegar. Fresh fruits and vegetables are sliced or chopped, soaked in vinegar, and seasoned with a little sugar and salt. For those who enjoy spicy food, chopped bird's eye chili peppers are added. After being left to marinate for some time, the flavors permeate the fruits and vegetables, making them tangy and refreshing. A common way to enjoy it is to add a sprinkle of spiced salt for extra flavor.
