首先准备新鲜的老鹅一只,把它剁成小块,清洗干净后控干水分备用。再准备一条鳐鱼,把它的肉剔下来,切成厚片,然后再切成条,接着把鱼刺去除掉,把鱼鳍取下来,最后把鱼鳍切上几刀,这样可以让它更好的吸收味道。

接下来开始处理辅料,把葱白拍碎切成段,生姜切片,大蒜对半切开,香叶、八角、桂皮准备好,花椒用纱布包起来扎紧口。把所有的材料都准备好以后,就可以开始烹饪了。
起锅烧油,放入葱姜蒜爆香,然后下入鹅肉翻炒出香味,炒至鹅肉发黄时,加入料酒、生抽、老抽调色,炒至上色后再倒入足量的开水,大火煮开后撇净浮沫,接着放入提前炸好的鱼鳍,放入所有调料,转小火慢炖一个半小时左右,待鹅肉软烂以后,就可以开大火收汁了。
