制作步骤:
1.鱿鱼须放在清水里,搓洗几遍,去掉表面的黏液。加点白醋在水里,搓洗起来,更容易去腥。洗完后,沥干水分,用刀切成3-4厘米长的小段。
2.锅里放水烧开,加入一片姜和少许料酒。水开后下鱿鱼须,煮20秒,看到鱿鱼须卷起来,捞出来。焯完水的鱿鱼须用凉水过一下,沥干。
3.蒜切片,姜切丝,葱切段,干辣椒剪成小段,青红椒切成小块。锅烧热,倒入食用油,油热后,放入花椒和干辣椒小火,炸出香味。
4.锅中放入姜丝、蒜片,爆香。然后转中大火,放入鱿鱼须,快速翻炒30秒。再加入青红椒块,继续翻炒。
5.锅中加入生抽、少量盐和白糖调味,淋上一点点料酒提鲜。大火快速翻炒均匀,让每一片鱿鱼须都裹上料汁。出锅前,撒上葱段,再翻炒几下,即可。
