准备食材:黄豆、石膏粉或者氯化镁溶液。
第一步,提前一晚上把黄豆泡好。然后把泡好的黄豆倒进搅拌机里,加入适量清水,打成黄豆浆。
第二步,在锅中倒入打好的黄豆浆,开大火煮沸,再转小火慢炖,边炖边撇去浮沫,直到汤汁变清。
第三步,往锅里的豆浆里撒入石膏粉或者倒入氯化镁溶液,静置片刻,待其凝固后,用勺子轻轻推动豆腐脑,使其松散,这样就可以出锅啦!
第四步,将豆腐脑放入布袋中,挤出水分。然后再放进模具中压紧实,盖上盖子,放冰箱冷藏 3 小时即可脱模切块。
