那么正宗的扬州四喜丸子应该怎么做呢?今天就手把手教大家做一道色香味俱全的家常版四喜丸子!首先准备 1000 克五花肉,把肥瘦分开切片后剁成肉馅。接着把肥膘肉打成泥,瘦肉切成细丝。
然后在碗中打入两个鸡蛋,加入姜末和料酒去腥,顺着一个方向搅拌均匀。接着把肥膘肉倒入肉馅中,再放入葱花继续搅拌上劲。最后呢,分次加入适量清水,边倒边搅,直到肉馅吸收水分变得粘稠为止。
接下来开始调制酱汁,碗中加入生抽、老抽、蚝油、白糖、鸡精、胡椒粉和水淀粉,充分搅拌均匀备用。
