把猪心对半切开,把里头的血块给洗干净喽,放到清水里泡 2 到 3 个小时,这中间多换几回水,把血水给泡出来,这样就能有效地让猪心的腥味少一些。时间到后,将泡好了的猪心冷水下锅,再放上提前切好的葱段、姜片、八角、桂皮、香叶、干辣椒、花椒、2 勺料酒,大火煮开以后把浮沫撇掉,然后转小火慢慢煮 30 到 40 分钟 。
