做法步骤:
1.牛腱子肉洗净,冷水下锅,加料酒和姜片,煮开3分钟,去血沫。捞出洗净后,逆着纹理切成薄片。
2.粉丝用温水泡30分钟至软,剪短些。青菜洗净切段,香菜葱切末,蒜切片或末,姜切片备用。
3.热锅倒少许油,放入姜片、蒜片、花椒和干辣椒,小火煸出香味。放入牛肉片大火翻炒至变色,加生抽和老抽,炒匀。倒入滚烫开水没过牛肉,大火烧开,转中小火,盖盖炖20-30分钟,牛肉软烂。
4.尝汤咸淡,加适量盐和白胡椒粉。下入泡软的粉丝,搅散防粘连,煮5分钟,晶莹透明。最后放入青菜,烫1-2分钟,翠绿变软。关火前,撒上香菜末、葱花,滴几滴香油,提香。
