大家好呀,我是梅子。今儿个给大伙分享一个在家做油条的小妙招,又简单又迅速,做出来的油条蓬松绵软,个个空心,比买的还棒!
咱先在盆里放 500 克面粉,接着加入 1 克小苏打、2 克食用盐,5克白糖,然后打一个鸡蛋进去,先把鸡蛋搅散。再放一包油条膨松剂,随后准备 300 克温水,分次少量倒进去,边倒边搅拌(要知道做油条的和面方法跟蒸馒头、蒸包子不一样,可别反复揉搓)最后搅到没有干面粉的时候,加 15 克食用油,用双手揣和折叠的方式揣匀就行,千万别反复揉搓。刚开始面团不容易弄,可以扣上保鲜膜醒面10分钟,之后再用按压折叠的方式揣匀,一直到最后,面团表面特别光滑就行,稍微整理整理形状,盖上保鲜膜,醒面两个小时左右。
时间一到,面团就醒发好啦。别揉,直接在案板上多撒些干面粉,把面团放上去,整理整理形状,擀成长方形的大厚片,厚度大概跟一根筷子厚就行。然后切成两指宽的长条,要是家里的油锅装不下太长的油条,就从中间断开,接着在面皮中间划一道水痕,两个面坯摞在一起,再用筷子从中间压一下,这步弄好以后,盖上保鲜膜再醒发 20 分钟。
时间到了,用手稍微抻长,然后放进七成热的油锅里。这时候要用筷子轻轻搅动一下,等油条完全浮起来以后,每隔30秒给它翻一个面,这样能让它两面受热均匀,熟得更好。一直炸到四面金黄,而且体积明显变大,就说明完全熟了,可以出锅啦!
