当归焖羊肉|家常菜的做法
- 羊肉加入淀粉,揉搓几分钟,再用清水清洗几遍就很干净了
- 淀粉可以吸附羊肉表面的脏东西
- 冷水下锅焯水,加入姜片、米酒去腥。
不用盖上盖子,煮开把浮末撇掉。
- 怕不干净,再用温水冲洗几遍。
洗干净后一定要把水分沥干。
- 再准备点当归、橘子皮、陈皮、香叶、去核红枣
- 起锅烧油,加入姜片,把姜片爆出香味再加入羊肉,一定要把羊肉炒到焦香

- 再加入两圈广东米酒,大火继续翻炒
- 再加入2圈生抽,稍稍炒出酱香味,这一步可以提前上色
- 再转到珐琅锅里
- 加入适量的热开水,陈皮、橘子皮、香叶、当归、去核红枣、盐、生抽、老抽、白糖
- 调料翻版均匀,大火煮开转小火煲40分钟,中途可以翻一下面。
煮好后有时间的话直接关火焖一个下午。
- 晚上吃多少盛多少出来,这样那一煲就不会反复煮。
- 大火煮开转小火焖个10分钟
- 撒上葱段就可以出锅了
