今天做一道一盘出卤肉饭,有肉有菜还有鸡蛋,加上红葱头酥,太香啦^_^
用料
五花肉
400g
红葱头
200g
鸡蛋
2个
小油菜/上海青
3根
蒜片
适量
生抽
1大勺(炒菜勺)
老抽
1小勺
料酒
2勺
八角
1个
冰糖
1把(大概十几粒)
卤肉饭的做法
- 第一步,备菜。把红葱头切片,另外切一些蒜片。
- 第二步,五花肉洗净擦干,切丁。
- 第三步,把小油菜洗干净。
- 起锅烧油,炸红葱头。
- 炸完红葱头再炸一些蒜片。
- 炸香炸脆后捞出备用。
⚠️注意在发黄的时候就要及时捞出,因为出锅时会带点温度颜色还会继续变深,但是焦了就会有苦味了。
- 起锅留一些葱油的底油煸炒五花肉,煸出油倒出一些(不然会有点腻),加入料酒爆香一下,再加入生抽、老抽稍微炒一下。
- 倒入开水没过五花肉,开大火煮开,撇一下浮末。可以加入一个八角炖煮,也可以不加。

加入1/3的油葱酥。
(个人认为分三次加能让油葱酥的味道持久而不被煮淡。)
转中小火炖煮30分钟。
- 炖煮期间,另用一锅烧水,加一些盐、油,水开后把油菜焯一下水捞出备用;
再煮两个鸡蛋,水开后煮7分钟捞出过冷水,剥皮备用。
- 30分钟后开盖,水如果少了补一些水,加入鸡蛋。
这里第二次加入油葱酥,还是1/3的油葱酥。
中小火继续炖煮20分钟,期间一定要注意水不能烧干了。
- 20分钟后开盖,倒入剩余的1/3油葱酥,开大火收汁,收汁后装盘。
- 可以用一个碟子装,放上米饭,摆上青菜,鸡蛋捞出来切半,再把卤肉和肉汁捞出来浇在米饭上,就OK啦。

小贴士
1. 一定要用红葱头,没有红葱头买小葱头,风味和大洋葱完全不一样;
2. 炖煮的时候可以加入一些猪皮,汤汁会更粘稠;
3. 卤肉饭可以加香料也可以不加,这里我加了一颗八角,不想让香料太抢味,可以根据个人口味添加。
