鲤鱼志本跃龙门，年夜宴中献肉身。
翘首似期岁有裕，裹糊淋酱挂金鳞。
今天做的是过年必备的硬菜，年年有余——糖醋鲤鱼跃龙门。糖醋鲤鱼要想摆盘姿势坚挺，跃龙门或者摆尾巴，必须做到两点：1⃣️淀粉糊不能太薄；2⃣️鱼在油锅里定型后，炸制的干硬程度必须到位、彻底。

糖醋鲤鱼跃龙门的做法

1. 一条杀好的鲤鱼，大约1.8斤，不要选超过2斤，太大不好炸透

1. 头下方各割一刀，拍一拍，即可轻松找到并抽去两边的鱼腥线

1. 45度倾斜着向鱼头方向改花刀，一面7刀，另一面错开切6刀

1. 切口处放姜片葱丝，肚子里也放一些，撒上料酒，腌制半小时

1. 土豆淀粉150克、面粉40克、啤酒150克，搅拌均匀

1. 搅拌完成后，淀粉糊是能流成一条线、拉出一条丝的稠糊

1. 把鱼两面和切口内部，挂满淀粉糊，准备油炸

1. 油温6成热，潮湿的木筷子插进去周边冒白沫，开始炸鱼

1. 木棍或者筷子挑着鱼嘴，另一只手捏着鱼尾，不要让鱼挨锅底，先给两面淀粉糊炸定型，再整个丢进油锅

1. 鱼肚子始终朝上，整体圈成O型，不停地把热油浇到鱼肚子上油炸不到的地方

1. 中火炸定型，转中小火炸干炸黄炸焦，再出锅，不然在盘子里会软趴趴

1. 炸好的鲤鱼，放在盘子里，是尾巴朝上翘起来的

1. 葱花、姜末、蒜末、陈醋、米醋、老抽、白糖、盐，提前称入碗里

1. 另起锅，锅里一点点底油

1. 下入碗里的料

1. 沸腾后小火煮5分钟，激发香味

1. 下入水淀粉25克（什么是水淀粉？淀粉5克，用20克水化开）

1. 出锅时候加10克明油（刚才炸鱼的熟油），这样表面更油亮

1. 均匀浇到鱼身上
