泥胡菜

花期：4-5月
二年生草本，泥胡菜茎通常单生，基生叶密集，长椭圆形，大头羽状深裂，很容易识别。
头状花序在茎枝顶端排成疏松伞房花序，总苞宽钟状或半球形，中、外层苞片上方近顶端有直立的鸡冠状突起的附片，此特征亦为泥胡菜所独有。
本种嫩叶可食，但苦味较重。花期花序位置常生蚜虫，密密麻麻布满花茎。
