一年就这一季，冬笋下来了赶紧炒一盘

每年冬天，我妈都要念叨好几次："冬笋下来了，买点回来炒肉。"这句话几乎成了我们家入冬的暗号。冬笋这东西，一年就这一季，错过了真得等明年。它不像春笋那么嫩，但胜在味道浓，嚼着有股子鲜甜，跟五花肉搭在一起，那叫一个绝。

买冬笋得挑沉手的，壳包得紧、根部不发黑的，这种水分足，不会空心。买回来先剥壳，冬笋壳比较硬，用刀从侧面划一道口子，顺着剥下来就行。剥好的冬笋切成薄片，别切太厚，不然不容易熟，嚼着也费劲。切好的冬笋先焯水，这一步不能省。冬笋里有草酸，直接炒会发涩，口感不好。水开了放进去，煮个三五分钟，捞出来沥干。这时候冬笋闻起来就没那股生涩味了，取而代之的是一种淡淡的清甜。

五花肉选肥瘦相间的，切薄片。锅里不用放太多油，五花肉自己会出油。肉片下锅，中小火慢慢中小火慢慢煸，煸到肉片边缘微微卷起来、油脂滋滋冒出来的时候，加蒜片和干辣椒爆香。然后把焯好的冬笋倒进去，大火翻炒，让冬笋吸饱猪油的香味。调味很简单：一勺生抽、半勺老抽上色、一点点盐和糖提鲜，翻炒均匀就能出锅。喜欢的话最后撒把蒜苗，颜色好看，味道也更香。

我小时候其实不太爱吃冬笋，觉得它硬邦邦的，嚼着费劲。后来长大自己做饭，有一次炒了一盘，突然就明白了我妈为什么每年冬天都要念叨。那种鲜甜是别的笋没有的，尤其是吸了猪油之后，又香又嫩，配米饭简直停不下来。现在我自己在家做这道菜，每次炒完都忍不住先尝一口。热气腾腾的，冬笋脆嫩，五花肉焦香，盘底还有一点油汤，拿它拌饭，我能多吃一碗。冬天嘛，不就图这么一口踏实的味道。
