干锅茶树菇，越嚼越香的下饭神器

前几天去菜市场，看见摊上的茶树菇挺新鲜，菌盖还没开，杆子也嫩，就抓了一把回来。晚上懒得炒太多菜，直接整了个干锅茶树菇，配米饭能吃两碗。茶树菇买回来先别急着下锅，根部带泥的地方剪掉，撕成小条，清水多洗两遍。我习惯洗完之后挤一挤水分，不然下锅容易出水，炒着炒着就变成炖菜了，干锅那股焦香味就没了。

配菜我一般用五花肉，切薄片，不用太多，借个油香就行。再切点青红椒、洋葱丝、蒜瓣、干辣椒，有芹菜的话也可以丢两根进去，提香很管用。锅里少放点油，先把五花肉片下进去，中小火慢慢煸，煸到肉片边缘微微卷起来、油被逼出来，这时候放蒜瓣和干辣椒，炒出香味。

接着把茶树菇倒进去，转大火翻炒。茶树菇一开始会吸油，别慌，继续炒，等水分慢慢收干，菌子边缘开始有点焦黄，那股香味就出来了。然后加一勺豆瓣酱，炒出红油，再放一点生抽、蚝油调味。糖可以少来一点，提鲜用，不用多。盐看情况，豆瓣酱和蚝油都有咸味，我一般最后尝一口再决定要不要补。

配菜这时候下，青红椒和洋葱丝丢进去，大火翻几下断生就行，别炒太久，脆脆的口感才好吃。出锅前撒点白芝麻和葱花，有条件的还可以滴几滴香油，香味更冲。装盘的时候我喜欢用那种小干锅，底下垫个酒精炉，边吃边加热，越吃越入味。茶树菇这东西就是越嚼越香，吸饱了肉的油脂和酱料的咸辣，比肉还抢手。每次做这道菜，肉总是剩，菌子倒是先被夹光。其实干锅菜没什么固定配方，家里有什么就放什么，关键是火要大，水分要炒干，那股焦香才是灵魂。下次可以试试加虾或者排骨，换个搭配，味道又不一样。
