朋友送的金华火腿，终于被我炖了

最近天凉了，就想喝点热乎的。家里冰箱正好还剩一小块金华火腿，是之前朋友从浙江带回来的，切面红白相间，闻着有股很正的发酵香。我就想着，干脆炖一锅火腿鸡汤，省事又鲜。做这个汤其实没什么门槛，但有几个小地方要注意。火腿不能直接下锅，不然会太咸。我一般先用温水把它刷洗干净，切成厚片，再泡个半小时左右，中间换一次水。这样咸味会淡一些，但鲜味还在。要是火腿本身特别咸，也可以冷水下锅焯一下，加点姜片去去味。

鸡的话，我这次用的是半只土鸡，砍成块。冷水下锅，放几片姜、一点料酒，煮开后把浮沫撇干净，捞出来用温水冲一下。这一步别省，浮沫不去掉，汤会有点浑，喝起来也不够清爽。然后就是炖了。砂锅里放鸡块和火腿片，加几片姜、一段葱，倒足量的热水。水一定要一次加够，中途再加会影响汤的味道。大火烧开后转最小火，慢慢煨。我一般炖一个半小时到两个小时，看鸡肉的软硬程度。火腿自带的咸鲜会一点点渗进汤里，鸡肉也吸饱了那种发酵的香气，吃起来比单纯炖鸡汤多了一层味道。出锅前丢一小把枸杞进去，再煮个十来分钟就行。盐先别急着放，尝一口汤再说。很多时候火腿的咸度已经够了，根本不用再加盐。如果实在觉得淡，就少放一点点。

这锅汤端上桌的时候，汤色清亮，表面浮着一层薄薄的油花，闻着就让人想多喝两碗。鸡肉用筷子一夹就脱骨，火腿片嚼着有韧劲，咸鲜味很足。喝完一碗，整个人都暖了。其实家常汤就是这样，食材简单，火候到了，味道自然不会差。不用搞什么花里胡哨的配料，火腿和鸡本身就是绝配，剩下的交给时间就行。下次天再冷一点，我打算往里丢几片冬笋，应该会更鲜。
