凭啥是八大菜系之首？这口鲁菜的“贵气”，真不是吹出来的

最近老有人问我：”你觉得哪个菜系最牛？“每次我都得停下来好好想想。论火爆，得数川菜，红油翻滚看着就过瘾；论精致，淮扬菜刀工一绝，跟艺术品似的；论生猛，粤菜那是敢为天下鲜。可要是论起这江湖地位和辈分，那还真得恭恭敬敬叫一声——鲁菜。有人不服气了：”鲁菜？不就是咸乎乎、黑乎乎、黏糊糊吗？“兄弟，这误会可大了去了！这就好比看见一个穿老头衫的，就以为人家没年轻过。今天咱就掰开揉碎了聊聊，这位稳坐”八大菜系之首“宝座的”老大哥“，到底凭的啥？

这口“贵气”，是刻在骨子里的基因

鲁菜这“老大”的地位，首先就赢在了起跑线上——出身好，有文化。

你别看现在各种网红菜系风头正盛，真要论资排辈，那都得管鲁菜叫一声“祖师爷”。鲁菜是八大菜系里唯一的自发型菜系，啥意思？就是人家没靠“借鉴”别人，完全是在齐鲁大地上自己长出来的原生菜，历史能追溯到春秋战国时期。

更重要的是，鲁菜背后站着的可是孔圣人。“食不厌精，脍不厌细”，这可不是随便说说的，直接把鲁菜的格调拉到了“治国平天下”的高度。在别的菜系还在琢磨怎么吃饱的时候，鲁菜就已经开始讲究“五味调和”、饮食礼仪了。这份深厚的文化底蕴，是其他菜系没法比的。 说白了，人家吃的不是菜，是文化，是“周礼”。

“宫廷玉液酒”，一百八一杯，这味儿熟悉不？

你要是觉得文化这东西太虚，那咱说点实在的。为啥说鲁菜“贵气”？因为人家真当过几百年的“国宴”标准。

元明清定都北京，山东离得近，近水楼台先得月。加上鲁菜用料实在、卖相大气、味道醇厚，特别符合皇家气派，那宫廷御膳房里，掌勺的大师傅十有八九是山东人。所以你看，满汉全席里头，一多半都是鲁菜的底子。这“御用”的经历，直接给鲁菜颁了个“品质认证”。 在当时，在北京城开个大酒楼，不是山东师傅掌勺，你都不好意思跟人打招呼。

硬桥硬马的真功夫，全靠手上见真章

当然，光靠出身和背景，坐不稳“头把交椅”。鲁菜能服众，靠的是硬桥硬马的看家本领，那是实打实的功夫菜。

你看看鲁菜的技法，爆、炒、烧、扒、塌……足足有几十种。别的菜系可能把一招鲜吃遍天，鲁菜是十八般武艺样样精通。特别是那个火候，简直到了出神入化的地步。一道爆炒腰花，考验的是厨师在几秒钟之内对火候和刀工的精准把握，少一秒则生，多一秒则老，那真是失之毫厘，差之千里。还有那吊汤，“唱戏的腔，厨师的汤”，鲁菜的清汤色清而鲜，奶汤色白而醇，那鲜味儿是味精鸡精调不出来的，是真正耐下心来花功夫熬出来的。这种对技法的极致追求，奠定了鲁菜在中国烹饪界的“宗师”地位，后来很多菜系的烹饪手法，多少都受了鲁菜的影响。
