冬至不仅吃饺子香，大块牛肉汤面也特诱人，早点晚餐连着吃也不腻

今天是冬至节气，这一天是北半球全年中白天最短、黑夜最长的一天，也是从今天开始，就进入数九了。

一般到了冬至要吃饺子，不过花儿和家人一商量，上周末吃了火锅，也煮了饺子吃，今天就换一种家人最爱吃的美食——香辣牛肉面。这里说的可不是泡面哦，而是真材实料的大块牛肉，吃起来真是特别过瘾。

说起来，这周牛肉面做法简单，口感咸香，做早餐、当晚餐都很适合，这天寒地冻的天气，一碗热汤面总能给人以温暖的感觉，更别说里面还有大块的喷香牛肉呢。

所以每次制作，我都会多弄出来一些，一部分带汤的牛肉等冷却后放入小锅中冷藏保存，次日再吃的时候，一个灶台煮面，一个灶台加热牛肉，这边再切些香菜，简单又美味。

【香辣牛肉面】

食材准备：

牛肉500克

郫县豆瓣酱、黄豆酱各一大勺

葱段姜片适量

八角、花椒、香叶、桂皮、草果

食用油、料酒、生抽、盐、冰糖

做法：

1、这是周末到货的4斤牛肉，进行分割中，我把带劲的部分切出来，500克左右用来做炖肉。

牛肉块放入清水中，煮沸去除血沫，捞出沥干水分备用。

2、炒锅内放入少许食用油，烧热后放入葱段姜片和香料，翻炒爆香。

3、炖牛肉，想要汤汁浑厚鲜亮，少不了来勺豆瓣酱，这里我用的是黄豆酱和郫县豆瓣酱，郫县豆瓣酱油亮微辣甘甜，而黄豆酱酱香浓郁，都可以为汤汁增味不少。

4、再来一勺料酒爆香，接着倒入3大勺的生抽、一小勺老抽调色调味。

5、放入牛肉块翻炒均匀，再加入几块冰糖。

炒香后倒入没过食材的温开水，这里的汤汁可以多放一些，毕竟是要拌面吃。

6、要保留足够的汤汁，又要牛肉块炖的酥烂，这里就要选择电压力锅了，省时又高效。选择牛羊肉档位，红烧模式，时间是30分钟。

7、牛肉炖上，出门买了切面和小油菜，香菜。小油菜清洗干净，香菜2根去梗洗净切大段。

8、面煮的差不多的时候，小油菜放入笊篱里，浸入锅中过一下沸水，这样焯油菜就很方便了。
