挑选与处理茼蒿：清晨去市场挑选叶片饱满、色泽鲜亮的茼蒿。回到家后，将茼蒿细细洗净，去除老叶和根部，只留下最鲜嫩的部分。接着把洗净的茼蒿切成细碎的小段，加入适量的盐，轻轻揉搓，逼出多余的水分，这样既能去除茼蒿的涩味，又能使蒸出来的菜团更加松软可口1。
