步骤一:
准备1斤新鲜的鸡爪,第一件事就是给它们“美美容”。用厨房剪刀剪去鸡爪的指甲,再放在流水下反复搓洗干净,特别是褶皱的地方,要多洗几遍。锅中加入足量的冷水,放入鸡爪,再加入2大勺料酒、4片姜片和2段葱结。大火烧开后,用勺子仔细撇去所有浮沫。水开后煮5分钟,捞出鸡爪,立刻用温水冲洗干净,沥干水分,再擦干。

步骤二:
锅中放少许食用油,加入冰糖碎,开小火慢慢炒。不停搅拌,直到冰糖完全融化,变成浅黄色,然后继续变成枣红色,迅速倒入焯好水的鸡爪,快速翻炒均匀,让每只鸡爪都裹上糖色。鸡爪盛出,一个个分开放置在烤网上,让表皮的水分充分晾干。用风扇对着吹半小时左右,摸上去鸡皮表面有点发紧、不粘手,就差不多了。

锅中倒入足量的食用油,大火将油烧热,小心地将风干好的鸡爪放入油锅中。迅速盖上锅盖,炸3-5分钟,晃动一下锅子,让鸡爪受热均匀。当看到鸡爪表皮变得金黄,并且开始起皱、出现明显的“虎皮”纹路时,用漏勺捞出来。鸡爪马上浸入准备好的冰水中,热胀冷缩,鸡皮迅速收缩起皱,形成更完美的虎皮。浸泡至少1小时以上,最好是2小时,虎皮越来越明显,凤爪也变得胖乎乎的,非常可爱。

准备基础香料:姜片2-3片,蒜末1大勺,豆豉1大勺,干辣椒2-3个,八角1个,桂皮一小块,香叶2片。调味汁:生抽2大勺,蚝油1大勺,白糖1小勺,盐适量,少许胡椒粉。锅中留少许底油,烧热后放入香料,小火炒出香味。香味出来后,倒入泡好的虎皮凤爪,翻炒几下,让凤爪裹上香料的气息。然后,加入生抽、蚝油、白糖、胡椒粉,翻炒均匀上色。倒入清水,没过凤爪。大火烧开后,转中小火,盖上锅盖,焖煮30-40分钟。
