先准备一块南瓜,把外皮去掉,洗干净后切成薄片,放进蒸锅蒸 15 分钟。蒸好的南瓜有500 克,倒进大碗里。依照个人口味加适量白糖,把它捣碎,然后放凉备用。等温度稍凉、不烫手的时候,再倒入 4克酵母搅拌均匀。随后准备400 克面粉和 50 克奶粉倒进去,顺着一个方向搅动均匀,最后搅到没有干面粉时,加入 20 克食用油,继续顺着一个方向搅拌均匀,这一步得多搅会儿,大概 5 分钟,一直搅到表面特别光滑,没有任何颗粒的状态,盖上盖子密封发酵 40 分钟。
发酵好的面糊会产生一些大气泡,用筷子搅拌几下,往里面加一点蔓越莓干,也可以放自己喜欢吃的红枣或者其它果脯,搅拌均匀后,将气泡排出,使面糊更加细腻均匀,这样可以让发糕的口感更加松软。在模具内部均匀地刷上一层食用油,方便后续发糕脱模。
二次发酵:将搅拌排气后的面糊倒入准备好的模具中,轻轻震动模具,排出面糊中的气泡,然后将表面整理平整。再次盖上保鲜膜,进行二次发酵,时间约为15 - 20分钟,当面糊体积再次膨胀,差不多达到模具的八分满时,二次发酵就完成了。
时间到后开火,水开后计时蒸 25 分钟,关火 8 分钟后,再开盖取出来。这南瓜发糕特别松软香甜,还有浓浓的奶香味。做法简单,营养又好吃。
