The name "Duede Fen" has two meanings: first, it sounds like "du" which means scooping up sticky rice noodle in broth, and second, it refers to friends and family gathering around a small pot to compete for the food.
The origin story of "Duede Fen" according to local folklore: It started in the early 1990s in the Qixiao area of Anshun, Guizhou. At first, it was just a street snack where various ingredients were cooked in a small pot and everyone would use bamboo skewers to "du" or scoop out the food. Another explanation is that because there wasn't much food, people would "compete" to get their share, hence the name.
Over time, it evolved into a more organized dish similar to a small hot pot. Today, Duede Fen hot pot has become popular not only in Guizhou but also in Beijing, loved by young people. The base of the soup is made from fermented sour broth in clay jars, which is mildly spicy. The minced meat is tender, and "soft whistle" is smoked pork belly with a unique smoked flavor. The Duede Fen itself is made from rice tofu, which becomes super soft and flavorful when cooked. Paired with rice, the sour broth is rich and delicious, enough to fill you up with three bowls!
