素鸡其实就是大豆制品，分布在中国南方和中部，是一道福建风味素菜。以素仿荤，口感与味道与鸡肉有点像，风味独特，此品为中国中部、南方的家常素菜。
素鸡以豆腐皮作主料，卷成圆棍形，捆紧煮熟，切片过油，加调料炒制而成的佳肴。
也可做成虾形、鱼形等其他形状。
菜色暗红，
口感以咸鲜味，形似鸡肉，软中有韧，味美醇香为主。
