秋分昼夜平分，餐桌荤素各半，照着吃真舒坦

秋分到，昼夜平分，饮食也要“平分”——荤素搭配指南。白天和黑夜打了个平手，咱的餐桌也别偏科：一半肉蛋鱼虾，给足蛋白质和满足感；一半时令蔬果菌豆，补上膳食纤维和清爽润燥。秋分后天气转凉、空气变干，贴秋膘别猛吃大鱼大肉，润燥也别只啃菜叶子。作为爱下厨的美食博主，我最近逛菜场，莲藕、山药、南瓜、芋头、板栗、菌菇都水灵灵地冒头。今天就聊聊秋分怎么把荤素搭得香、搭得润、搭得全家都爱吃。

秋分这个节气很妙，太阳不偏不倚，昼夜刚好对半。咱做饭也得学学这份“公平”。我家餐桌上一直有个土办法：一荤、一素、一菌豆。不是拿秤称，而是让肉有肉香，菜有菜鲜，汤有汤润。全荤，吃两口就腻，晚上还容易口干；全素，嘴巴是清爽了，可胃里空得快，秋凉一吹，总觉得不顶饱。荤素“平分”，其实是口感和营养的平衡。

先说荤菜。秋分后我常买鸭肉、鲈鱼、虾、牛肉、排骨和鸡肉。鸭肉炖冬瓜，汤清味鲜，鸭肉软烂不柴；鲈鱼清蒸，姜丝一铺，热油一泼，鲜气直往鼻子里钻；虾仁滑蛋，嫩得能用勺子舀；牛肉切薄片，和芹菜一炒，锅气足，嚼着香；排骨配莲藕或山药，小火慢炖，肉脱骨，藕粉糯。做法上，少油炸，多蒸、炖、煮、焖。调味也别太猛，少放辣椒，多用姜、葱、白胡椒、少许醋，提鲜又不燥。

再说素菜。秋分菜场里，莲藕、山药、百合、南瓜、芋头、白萝卜、秋葵、菠菜、木耳、香菇、豆腐，个个都是好角色。莲藕排骨汤是经典，藕块炖到边缘微粉，咬开还带一点脆；山药炒木耳，山药滑、木耳弹，蒜末一爆，香得很；南瓜蒸百合，甜糯清润，当主食也合适；芋头焖鸡，芋头吸饱鸡汁，比肉还抢手；白萝卜炖牛腩，萝卜透明入味，牛腩软而不散；秋葵拌豆腐，焯水后切段，淋生抽、香醋、香油，清爽解腻。素菜别只会水煮，用香菇水、蒜末、少许蚝油或生抽提味，香气立马不一样。

搭配也有小公式：一荤配一根茎或绿叶，再加一菌豆。颜色最好三种以上，红的胡萝卜、绿的菠菜、白的山药、黑的木耳、黄的南瓜，看着就有食欲。寒热也要搭：鸭肉偏凉，多放姜；牛肉偏温，配萝卜。口感要错开：嫩配脆，糯配鲜，软配弹。烹饪方式也别全炒，一道炖汤、一道快炒、一道凉拌，厨房不忙，餐桌丰富。

分享我家秋分一日三餐。早餐：南瓜小米粥，配水煮蛋和凉拌木耳，暖胃不撑。午餐：清蒸鲈鱼、蒜蓉秋葵、杂粮饭，鱼肉嫩，秋葵脆，吃完不犯困。晚餐：莲藕排骨汤、山药炒木耳、半碗米饭，汤鲜藕糯，舒服。下午加餐可以蒸个梨，或者煮银耳羹，润一润。减脂的朋友，多选鱼虾鸡胸，少碰排骨；老人孩子，菜切小点，炖软烂些；脾胃弱的，少生冷，蔬菜做熟吃。
