外卖吃腻了？六道家常下饭菜，有肉有蛋有菜，轻松搞定晚餐

吃腻了外卖，今天不知道吃什么？

这六道家常下饭菜就是解药：有肉，有蛋，有菜，做法简单，清爽入味，厨房小白照着做也不会出错。

灶火一开，蒜末爆香，今天晚上的米饭就有了着落。

肉肠炒包菜鸡蛋

主料：肉肠，包菜，鸡蛋

配菜：蒜

调味料：生抽，蚝油，食用油

1.包菜用手撕成小片，粗硬的菜梗单独放。

2.肉肠斜切，鸡蛋打散。

3.锅烧热，肉肠煎到边缘微卷，盛出；

4.鸡蛋倒进锅里，炒成大块盛出。

5.加一点油，蒜末入锅炸出香气，先放菜梗，再放菜叶，大火炒到叶片变软发亮。

6.肉肠和鸡蛋回锅，沿锅边淋生抽，放蚝油，快速翻匀就关火。

包菜还带一点脆，鸡蛋吸满汤汁，不容易发干。

包菜怎么炒不出水？洗完充分沥干，锅热后用大火，别盖锅盖。

洋葱炒鸡腿肉

主料：去骨鸡腿，洋葱

配菜：黑胡椒

调味料：料酒，淀粉，生抽，蚝油，白糖，盐，清水

1.鸡腿切成一口大小，加料酒，淀粉，盐和黑胡椒抓到表面发黏，放在一旁入味。

2.洋葱切块。

3.生抽，蚝油，白糖，黑胡椒和清水调成碗汁，搅到糖粒化开。

4.锅底铺油，鸡腿块摊开，煎出金黄焦边再翻动，肉块变色后盛出。

5.洋葱入锅炒到边缘透明，鸡腿回锅，淋入碗汁，翻炒到酱汁浓亮盛出。

这道菜可以用来做午饭，酱汁拌饭很开胃。

鸡腿肉怎么炒才嫩？淀粉锁水是一层，煎的时候不反复翻动是关键。

没有鸡腿肉，可以用猪梅花肉代替，味道一样好。

葱烧鸡蛋豆腐

主料：嫩豆腐，鸡蛋

配菜：香葱，蒜

调味料：生抽，蚝油，番茄酱，淀粉，清水，食用油

1.豆腐切成厚片，鸡蛋搅散，葱白，葱绿分开放。

2.嫩豆腐容易碎，切好直接用刀面托进蛋液。

3.生抽，蚝油，番茄酱，淀粉和清水搅匀，调成料汁。

4.锅里油热，葱白和蒜末爆香，豆腐连同蛋液滑入锅中，等定型再翻面。

5.两面泛黄时淋料汁，轻推豆腐，烧到汤汁冒出细密小泡，撒葱绿出锅。

豆腐裹着软嫩鸡蛋，很适合做孩子放学之后的配饭菜。

如果没有番茄酱，可以用半个去皮的番茄切碎炒软，酸香更自然。

蒜香炒鸡翅尖

主料：鸡翅尖

配菜：姜，蒜，青椒，红椒，花椒

调味料：料酒，生抽，老抽，蚝油，白糖，食用油

1.鸡翅尖洗净，青红椒切丁，蒜切成细末。

2.鸡翅尖怎样去除腥味？冷水入锅，放入姜片，料酒以及花椒，待浮沫出来后捞净。

3.把鸡翅尖焯到表皮收紧，捞出沥干；水分不控净，入锅容易溅油，也炒不出焦边。

4.锅里放油，蒜末用小火炒到浅金色，放鸡翅尖，加入生抽，老抽，蚝油和白糖。

5.中小火不断翻炒至翅尖微焦，青红椒丁入锅，炒到颜色变亮就关火。

蒜粒贴在鸡翅尖表面，骨边的肉咸香紧实，加班夜宵端一盘很合适。

害怕辣的话可以换成彩椒，颜色照样漂亮。

青椒虎皮蛋

主料：青椒，鸡蛋

配菜：蒜

调味料：豆瓣酱，辣椒面，生抽，蚝油，白糖，鸡精，淀粉，清水，食用油

1.把青椒去蒂后切成大段，表面水分擦干；鸡蛋打散。

2.白糖，鸡精，辣椒面，生抽，蚝油，淀粉以及水混合均匀，调成料汁；

3.把鸡蛋炒成蓬松的大块，盛出。

4.锅里留薄油，青椒贴着锅底煎，表皮起皱并出现焦斑时翻面。

5.把蒜末和豆瓣酱炒出红油，青椒，鸡蛋回锅，淋入料汁，大火收汁水。

虎皮青椒带着焦香，鸡蛋像海绵一样兜住浓汁，是米饭消耗最快的一盘。

虎皮为什么煎不出来？青椒表面要干，锅要热，下锅之后不要马上翻动。

喜欢有嚼劲的话，可以把鸡蛋换成四个煎荷包蛋，再切成大块烧汁。

凉拌杂蔬

主料：洋葱，青椒，芹菜

配菜：大葱，香菜，熟花生米，蒜，白芝麻（参数丨图片）

调味料：香醋，生抽，蚝油，香油，白糖，盐

1.洋葱，青椒，大葱切成细丝，芹菜斜切小段，香菜切段，蒜切薄片。

2.把香醋，生抽，蚝油，香油，白糖以及盐放入碗中，搅到料汁融合。

3.把洋葱，青椒，大葱，芹菜，香菜以及蒜片放入盆里，先淋料汁抓拌到微微变软。

4.上桌前把花生米，白芝麻一起放在上面，快速搅拌均匀后马上装盘，否则花生会变得很潮湿。

蔬菜脆响，酸香味浓，可以作为家庭聚会或野餐时的食物。

不吃香菜可以换用黄瓜丝来代替，这样会更加清凉一些。

洋葱怕辣的话，可以把洋葱放入冷水里面清洗一下，晾干再跟其它食材一起烹饪，这样口感会更好一些。

肉肠焦边一咬就发出声音，但是包菜还是很脆；鸡腿肉可以看到里面的汁水，洋葱的甜味把油腻感给中和掉了。

鸡蛋豆腐软得会摇晃，酸甜料汁紧贴着嫩芯；虎皮蛋是最浪费米饭的一道菜，但是豆瓣酱本身有咸味，所以不用加盐。

鸡翅尖的好处就是蒜香味可以渗透到骨头里面去，黑胡椒要控制好用量，不要把肉的味道给掩盖住了。

凉拌杂蔬用来清口，花生要在上桌前再拌。
