砂锅啫啫海鲈鱼，鲜香无腥锁住鱼肉本味

提起啫啫煲，最动人的便是砂锅上桌时“啫啫”作响的烟火声。这道啫啫海鲈鱼完美保留粤式啫煲的精髓，成品几乎没有腥味，鱼肉鲜嫩入味，浓郁的蒜香裹着鱼肉的鲜甜，一口下去香气在嘴里层层散开。在家用普通砂锅就能复刻，不需要复杂烹饪技巧，处理好鱼肉、把控火候，就能做出饭店级别的美味，很适合家庭聚餐或是给爱人准备一顿有仪式感的晚餐。

准备食材，选用一条约1.5斤的鲜活海鲈鱼，搭配一个大洋葱、75克蒜瓣与等量姜丁，少许葱花、小米辣圈来提色增香。调味需要盐、鸡精、料酒、蚝油、生抽、干生粉，再准备自制蒜蓉酱与水煮鱼料，还有适量清水。鲜活海鲈鱼是这道菜鲜嫩的关键，先将鱼仔细清洗干净，剔除鱼腹里的血线，这一步是去除腥味的重中之重，随后改刀，把鱼肉切成相连的片状，保持整条鱼的造型，方便摆盘和均匀入味。改刀完成后，将鱼放入盆中，加入盐、鸡精、料酒和清水浸泡一小时，长时间浸泡能够渗入基础底味，同时进一步带走鱼肉里残留的血水，减轻海鱼自带的腥气。

鱼肉浸泡的间隙，把配菜处理妥当，洋葱切大块，蒜瓣、生姜切成丁，小米辣切圈备用。泡好的鱼捞出，充分沥干表面水分，水分控干才能让后续腌料牢牢挂在鱼肉上。往鱼身上加入盐、鸡精、干生粉，再放入自制蒜蓉酱、水煮鱼料、蚝油和生抽，用手轻轻抓拌均匀，静置腌制十五分钟，蒜蓉酱赋予鱼肉厚重蒜香，少许水煮鱼料增加复合风味，生粉锁住鱼肉汁水，避免烧制过程中肉质变柴。

关火之后，撒上一把翠绿葱花，一锅热气腾腾的啫啫海鲈鱼就完成了。掀开锅盖的瞬间香气扑面而来，鱼肉洁白嫩滑，轻轻一夹就能散开，没有一丝腥气，蒜香、洋葱甜香与鱼肉鲜味融合在一起，咸香浓郁。砂锅保温性强，端上桌依旧滋滋作响，热闹又有氛围感。
