千张结烧肉：肉香全被千张结吸走了，比肉还抢饭

千张结烧肉这道菜，属于那种端上桌肉先被忽略、千张结先被夹光的类型。肉炖得软烂当然好吃，但千张结吸饱了肉汁，咬一口又韧又香，反而更让人停不下筷子。我家以前做红烧肉，总爱往里丢一把千张结，后来慢慢发现，千张结才是这锅菜里的“隐形主角”。

做法不难。五花肉切块，冷水下锅焯一下，捞出沥干。锅里少放点油，把肉块煎到表面微微发黄，油被逼出来一些，炖出来不会太腻。加几片姜、一点葱段，倒生抽、老抽、蚝油，喜欢的话可以放一小块冰糖，颜色更亮，味道也更柔和。接着加热水，水量没过肉就行。大火烧开后转小火，盖上盖子炖四十分钟左右。这时候肉已经差不多软了，把千张结放进去，再炖十五到二十分钟。千张结不用煮太久，不然会太软，失去那种韧韧的口感。最后开大火收一下汁，汤汁浓稠一点，裹在肉和千张结上，特别下饭。

千张结可以自己打，也可以直接买现成的。自己打的话，把千张切成长条，打个松松的结就行，别打太紧，不然里面不容易入味。买现成的更方便，回家洗一下就能用。有几个小窍门挺管用。第一，肉一定要先煎一下，煎过的肉炖出来更香，汤也更浓。第二，千张结别太早放，放早了容易煮散，口感也会变差。第三，收汁的时候别走开，汤汁浓了容易糊锅，得看着点。第四，如果怕腻，可以加几块土豆或者胡萝卜一起炖，能解腻，还能多一道菜。

这道菜没什么复杂的故事，就是家里常做的那种味道。小时候家里炖肉，我妈总说“光吃肉多腻，放点千张结进去”，那时候不懂，觉得千张结没肉好吃。长大后才明白，千张结才是真正懂吃的人选的那一口。它不抢风头，但把肉香全收进了自己肚子里，吃起来比肉还满足。现在我自己做这道菜，还是会多放点千张结。肉可以少一点，千张结一定要够，因为最后抢着吃的，往往都是它。
